Bulk Sweeteners: generally less sweet than sucrose and replace volume as well as sweetness. Includes Erythritol, Isomalt, Lactitol, Maltitol, Mannitol, Sorbitol, and Xylitol.
High-intensity sweeteners: usually much sweeter than sucrose and are used in far smaller quantities with the sole purpose of adding sweetness. Includes Acesulfame-K, Aspartame, Cyclamate, Saccharin, Sucralose and Stevia.
